March Madness is here, and we need some snacks that:
- won’t make us gain 25 pounds by the championship
- won’t make us feel bloated, horrible and guilty
- are super awesome and satisfy any salty/sweet cravings!
Enter…kale chips & popcorn.
Kale Chips
6 servings
1 large bunch of kale
1 TB olive oil (or 2 tsp olive oil + 1 tsp tabasco!)
1/2 teaspoon your favorite seasoning (21 Seasoning Salute, Mrs. Dash-type, etc.)
Step 1: Prepare 2 baking sheets with parchment or nonstick spray. Preheat oven to 305 degrees. Wash and pat dry your kale leaves (as dry as possible!).
Step 2: Tear the leaves off of each of the stalks. Discard the stalks. In a large bowl, toss the leaves with the oil and seasonings. Spread out onto the baking sheets.
Step 3: Bake for 20 minutes. Shake the pan a little; if the leaves are not fully crisp and “shaky,” bake for 5 minutes. Let cool on the counter and store in gallon zipper plastic bags.
