The humble, delicious idea of preserving your fruit is one my grandmother and her sisters used to do regularly. The fruits usually came from their gardens or a nearby farmer friend. My grandmother was one of the few (out of 8) that lived in a city, and farmers&#8217; markets weren&#8217;t as popular back in the day; so she bought her fruit at the grocery store. Since I don&#8217;t have a garden (yet), I&#8217;m in a similar boat. But, even if you aren&#8217;t Farmer Joe or Jane, you can still make delicious preserves! I just discovered white peaches (I know, I know), so I used a bundle of these to make it happen (&#038; they were on sale, bonus). White peaches are pretty sweet, so that allowed me to cut back on sugar.<\/span><\/span><br \/><span><span><br \/><\/span><\/span><\/p>\n<div><a href=\"http:\/\/1.bp.blogspot.com\/-n37RNDa0-xY\/UksWL1fg_rI\/AAAAAAAAEUI\/HhQSdkqBNJY\/s1600\/photo%2864%29.JPG\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"240\" src=\"http:\/\/1.bp.blogspot.com\/-n37RNDa0-xY\/UksWL1fg_rI\/AAAAAAAAEUI\/HhQSdkqBNJY\/s320\/photo%2864%29.JPG\" width=\"320\"><\/a><\/div>\n<p><span><span><span>Basil Peach Preserves<\/span><\/span><\/span><br \/><span><span><span><span><i>This recipe is the simplest I could find to make preserves, with a couple of my own changes. Preserves are incredibly versatile, not just for toast! Top it on pancakes or in crepes, mixed in oatmeal or yogurt, or use as a sauce for pork, shrimp, chicken or turkey. This can also be the base for a spicy jam that you top on cream cheese for an awesome holiday dip. The basil is present, but not overpowering.<\/i> <\/span><\/span><\/span><\/span><br \/><span><span><span><span>Makes 3 cups of preserves<\/span><\/span><\/span><\/span><\/p>\n<p><span><span><span><span>8-10 medium peaches\u00a0 (about 3 1\/2 pounds)<\/span><\/span><\/span><\/span><br \/>Pinch of kosher salt<br \/>Dash of cinnamon<br \/><span><span><span><span>1 1\/2 cups sugar<\/span><\/span><\/span><\/span><br \/><span><span><span><span>Juice of 1 lemon<\/span><\/span><\/span><\/span><br \/><span><span><span><span><span><span><span><span>10 fresh basil leaves<\/span><\/span><\/span><\/span><\/span><\/span><\/span><\/span><br \/><span><span><span><span><span><span><span><span>\u00a0<\/span><\/span><\/span><\/span> <\/span><\/span><\/span><\/span><br \/><a href=\"http:\/\/1.bp.blogspot.com\/-WC5juv_usyA\/Uk4yqX5vAbI\/AAAAAAAAEUg\/oZZSI60FkUc\/s1600\/IMG_3284.JPG\" imageanchor=\"1\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"213\" src=\"http:\/\/1.bp.blogspot.com\/-WC5juv_usyA\/Uk4yqX5vAbI\/AAAAAAAAEUg\/oZZSI60FkUc\/s320\/IMG_3284.JPG\" width=\"320\"><\/a><span><span><span><span><br \/><\/span><\/span><\/span><\/span><span><span><span><span><b>Step One:<\/b> Peel, pit and slice peaches into chunks. (If you want smaller pieces, pulse in a food processor until chunky.) <i>I personally like chunky preserves for versatility, but it&#8217;s your call.<\/i><\/span><\/span><\/span><\/span><br \/><span><span><span><span><\/span><\/span><\/span><\/span><\/p>\n<p><a href=\"http:\/\/3.bp.blogspot.com\/-RPV85XZ-S2c\/Uk4zIxGmyDI\/AAAAAAAAEU0\/56S0FCoZ-Gk\/s1600\/IMG_3286.JPG\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"213\" src=\"http:\/\/3.bp.blogspot.com\/-RPV85XZ-S2c\/Uk4zIxGmyDI\/AAAAAAAAEU0\/56S0FCoZ-Gk\/s320\/IMG_3286.JPG\" width=\"320\"><\/a><br \/>\u00a0<b><span><span><span><span>Step Two:<\/span><\/span><\/span><\/span><\/b><span><span><span><span><b> <\/b>Move the peaches to a large saucepan, adding salt, cinnamon, sugar and lemon juice. Bring to a boil, stirring frequently. Keep boiling and stirring until the bubbles slow down, the foam subsides, the fruit rises to the top and the jam sticks to a spoon when lifted (15 minutes total). Add in the whole basil leaves and stir. Let cool for an hour, and then transfer to the fridge until completely cooled.<\/span><\/span><\/span><\/span><br \/><b><span><span><span><span><\/span><\/span><\/span><\/span><\/b><\/p>\n<p><b><span><span><span><span><\/span><\/span><\/span><\/span><\/b><b><span><span><span><span><a href=\"http:\/\/2.bp.blogspot.com\/-9ym59AithOQ\/Uk4zBGwX0sI\/AAAAAAAAEUo\/jqclePuSOus\/s1600\/IMG_3287.JPG\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"213\" src=\"http:\/\/2.bp.blogspot.com\/-9ym59AithOQ\/Uk4zBGwX0sI\/AAAAAAAAEUo\/jqclePuSOus\/s320\/IMG_3287.JPG\" width=\"320\"><\/a><\/span><\/span><\/span><\/span><\/b><span><span><span><span><b>\u00a0<\/b><\/span><\/span><\/span><\/span><br \/><span><span><span><span><b>Step Three:<\/b> Transfer cold preserves to sanitized jars. The preserves can stay in the fridge for up to 2 months.
