We&#8217;ll start with fresh rosemary.<\/span><\/span><\/p>\n<p><span><span>4 red\/new potatoes<\/span><\/span><br \/><span><span>2 TB fresh rosemary<\/span><\/span><br \/><span><span>2 TB flour <\/span><\/span><br \/><span><span>2 TB olive oil<\/span><\/span><br \/><span><span>Sea salt and black pepper<\/span><\/span><br \/><span><span><br \/><\/span><\/span><br \/><span><span>Rinse and scrub potatoes. If you like, peel the potatoes (I prefer skin on). Using a box grater, grate all four potatoes on a cutting board.\u00a0<\/span><\/span><br \/><span><span><br \/><\/span><\/span><br \/><span><span>Once potatoes are all peeled (it&#8217;ll be messy), take a clean kitchen towel and pat the pile of potatoes. You are removing as much of the excess moisture as possible to crisp the potatoes. In a large bowl, add the potatoes, rosemary, flour, salt, and pepper. Stir until flour is soaked in.\u00a0<\/span><\/span><br \/><span><span> <\/span><\/span><br \/><span><span>In a large skillet, heat the olive oil on medium high. Once it bubbles, add the potato mixture. There are two ways to cook it:\u00a0<\/span><\/span><br \/><a href=\"http:\/\/1.bp.blogspot.com\/-YG3BQ1affac\/TgziRdXn7XI\/AAAAAAAAAyI\/k0ziIkOZFjM\/s1600\/photo-433.jpg\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"240\" src=\"http:\/\/1.bp.blogspot.com\/-YG3BQ1affac\/TgziRdXn7XI\/AAAAAAAAAyI\/k0ziIkOZFjM\/s320\/photo-433.jpg\" width=\"320\"><\/a><span><span><b>1) Crispy:<\/b> like a giant pancake that you flip after several minutes and\u00a0<\/span><\/span><br \/><span><span><b>2) Fluffy:<\/b> a mix of potatoes that you are constantly stirring and turning.\u00a0<\/span><\/span><\/p>\n<p><span><span>Do how you like but-either way-it&#8217;ll take 10 minutes to cook. Serve as a side or as the main entree by adding cheese, bacon, or sausage, and fill in tortillas (breakfast tacos).
