An omelette sounded good, but I wanted to sneak in some veggies also, so here&#8217;s how it went.<\/div>\n<div><a href=\"http:\/\/3.bp.blogspot.com\/-g65k2I5xRHw\/ThUaFcdj3mI\/AAAAAAAAA0M\/0R-b3tkyJNc\/s1600\/photo-557.jpg\" imageanchor=\"1\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"320\" src=\"http:\/\/3.bp.blogspot.com\/-g65k2I5xRHw\/ThUaFcdj3mI\/AAAAAAAAA0M\/0R-b3tkyJNc\/s320\/photo-557.jpg\" width=\"240\"><\/a><\/div>\n<p><a href=\"http:\/\/3.bp.blogspot.com\/-44f9aP7Svgw\/ThUaUsFThMI\/AAAAAAAAA0U\/_j4XbdiR2kA\/s1600\/photo-555.jpg\" imageanchor=\"1\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"240\" src=\"http:\/\/3.bp.blogspot.com\/-44f9aP7Svgw\/ThUaUsFThMI\/AAAAAAAAA0U\/_j4XbdiR2kA\/s320\/photo-555.jpg\" width=\"320\"><\/a><span>Green Omelette<\/span><br \/><span><span>*serves 1, but easily doubles, triples, etc.*<\/span><\/span><br \/><span><span>2 eggs<\/span><\/span><br \/><span><span>2 small mushrooms<\/span><\/span><br \/><span><span>handful of spinach<\/span><\/span><br \/><span><span>3 TB cilantro<\/span><\/span><br \/><span><span>1 slice of bacon, chopped <\/span><\/span><br \/><span><span>Dash of salt and pepper <\/span><\/span><\/p>\n<div><span><span>Preheat pan\/skillet. FINALLY I remembered to spray with non-stick cooking spray after pan is already heated (<i>right <\/i>before you put food on). In a small bowl, whisk eggs with a fork or whisk, heh.\u00a0<\/span><\/span><\/div>\n<div><span><span>Chop mushrooms and cilantro and add to small bowl. Add in spinach, bacon, salt and pepper. Stir a bit (if the bowl&#8217;s not too full).<\/span><\/span><\/div>\n<div><span><span>Pour egg mixture into pan and cook on medium heat for 4 minutes. When eggs are 75% cooked (just a little runny in the middle), flip half of omelette over. Let cook for a few more minutes, until no runnyness. Serve with your favorite bread and a fruit. Matt got some from work a while back, and I <i>love them.<\/i> Fruit knife on one side, spoon on the other. Great for melon.
