But how else to I explain that this low-fat bread is sweet like a muffin and not savory cornbread? I saw <a href=\"http:\/\/www.foodnetwork.com\/recipes\/food-network-kitchens\/low-fat-raspberry-corn-muffins-recipe\/index.html\">this recipe<\/a> and hacked away at it. Sorry, Food Network. It was a good idea that you had, though. The one I made is a slice-able bread, uses no white sugar and has a bit more bite because of the strawberries. Also, instead of half cornmeal flour and half white flour, we have a little more fiber and nutrients by mixing it up with cornmeal, wheat flour and white flour. You know how I do.<\/p>\n<p>Anyhoo, on to the food&#8230;<\/p>\n<p><span><b>\u00a0Low Fat Strawberry-Cornmuffin Bread<\/b><\/span><br \/><span><span>Makes one loaf, but can easily double OR bake in muffin pans instead<\/span><\/span><\/p>\n<div><a href=\"http:\/\/4.bp.blogspot.com\/-NmSEwth0pBY\/TidI0eU9hcI\/AAAAAAAAA1E\/-xa7wpmu1Fo\/s1600\/photo-576.jpg\" imageanchor=\"1\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"320\" src=\"http:\/\/4.bp.blogspot.com\/-NmSEwth0pBY\/TidI0eU9hcI\/AAAAAAAAA1E\/-xa7wpmu1Fo\/s320\/photo-576.jpg\" width=\"240\"><\/a><\/div>\n<p><span><span>INGREDIENTS<\/span><\/span><br \/><span><span> <\/span><\/span>1 cup cornmeal flour<br \/>1 cup whole wheat flour<br \/>1 cup all-purpose flour<br \/>1\/2 teaspoon salt<br \/>2 teaspoons baking powder<br \/>3\/4 cup orange juice + 1 TB zest<br \/>1\/2 cup lowfat buttermilk<br \/>1 teaspoon vanilla extract <br \/>2 egg whites<br \/>1\/3 cup agave syrup<br \/>1 cup chopped strawberries + 2 strawberries for topping<br \/>3 TB brown sugar + 2 teaspoons cinnamon mixed together, for topping<\/p>\n<p>In a medium bowl, combine all dry ingredients. (orange juice through agave syrup)<br \/>Pour wet ingredients into dry ingredients and stir well. Fold in chopped strawberry.<\/p>\n<div><a href=\"http:\/\/1.bp.blogspot.com\/-xQ-_RdY_k40\/TidJC-_gk5I\/AAAAAAAAA1Q\/rk-C6PV2SKU\/s1600\/photo-572.jpg\" imageanchor=\"1\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"240\" src=\"http:\/\/1.bp.blogspot.com\/-xQ-_RdY_k40\/TidJC-_gk5I\/AAAAAAAAA1Q\/rk-C6PV2SKU\/s320\/photo-572.jpg\" width=\"320\"><\/a><\/div>\n<p>Pour dough into a bread pan (I lined the bottom with a rectangle piece of parchment paper.). Top with sliced strawberries and brown sugar\/cinnamon mixture.<br \/>Bake at 375 for 30 minutes, or until a toothpick comes out clean from center of loaf. Serve warm and buttered.
