I&#8217;m continuing the homemade grab-and-go breakfast kick with a new addition&#8230;OLACAKES (oh-la-cakes).<\/div>\n<div><\/div>\n<div><i><span><span><b><u>Olacakes<\/u><span>&#8211;easy to grab, healthy<\/span><\/b><\/span><\/span><\/i><\/div>\n<div><i><span><span><b><span>and tasty pancakes topped and\u00a0<\/span><\/b><\/span><\/span><\/i><\/div>\n<div><i><span><span><b><span>cooked with granOLA on one side<\/span><\/b><\/span><\/span><\/i><\/div>\n<div><span><span><span><span>I admit it, they&#8217;re good! My first try at these are as follows:<\/span><\/span><\/span><\/span><\/div>\n<div><b><br \/><\/b><\/div>\n<div><b><span><span><span><span><span><i>Apple Cinnamon Olacakes<\/i><\/span><\/span><\/span><\/span><\/span><\/b><\/div>\n<div><b><span><span><span><span><span><i><span>Makes 14 olacakes, or 6-7 servings<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/b><\/div>\n<div><\/div>\n<div><b><span><span><span><span><span><i><span>PANCAKE:<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/b><br \/><b><span><span><span><span><span><i><span>1 medium apple, grated (I kept the peel)<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/b><\/div>\n<div><b><span><span><span><span><span><i><span>1 1\/3 cup wheat flour<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/b><\/div>\n<div><b><span><span><span><span><span><i><span>1\/2 cup all-purpose flour<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/b><\/div>\n<div><b><span><span><span><span><span><i><span>1\/2 t. each: baking powder and baking soda<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/b><\/div>\n<div><b><span><span><span><span><span><i><span>2 teaspoons ground cinnamon<\/span><\/i><\/span><\/span><\/span><\/span><\/span><span><span><span><span><span><i><span> <\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/b><\/div>\n<div><b><span><span><span><span><span><i><span>2 egg whites<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/b><\/div>\n<div>\n<div><b><span><span><span><span><span><i><span>2\/3 cup unsweetened vanilla almond milk (2% cow&#8217;s milk works, too, or 1\/2 cup lowfat buttermilk)<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/b><\/div>\n<div><\/div>\n<div><b><span><span><span><span><span><i><span>TOPPING:<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/b><\/div>\n<div><b><span><span><span><span><span><i><span>1\/2 cup uncooked, dry oats<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/b><\/div>\n<div><b><span><span><span><span><span><i><span>1\/2 cup shredded sweetened coconut<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/b><\/div>\n<div><\/div>\n<div><b><span><span><span><span><span><i><span>DIRECTIONS:<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/b><\/div>\n<div><a href=\"http:\/\/3.bp.blogspot.com\/-FFBMfzkCCM8\/TnI7RY3vhfI\/AAAAAAAAA5Y\/SBLCVl3Jfgs\/s1600\/photo-650.jpg\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"240\" src=\"http:\/\/3.bp.blogspot.com\/-FFBMfzkCCM8\/TnI7RY3vhfI\/AAAAAAAAA5Y\/SBLCVl3Jfgs\/s320\/photo-650.jpg\" width=\"320\"><\/a><span><span><span><span><span><i><span><b>ONE:<\/b> Spread coconut and oats onto a foil-lined baking sheet. Bake at 350 for 8-10 minutes, or until coconut is toasted. Set aside.<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/div>\n<div><span><span><span><span><span><i><span><b>TWO:<\/b> Mix flour, baking powder, baking soda and cinnamon together in a large bowl.\u00a0<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/div>\n<div><span><span><span><span><span><i><span><b>THREE:<\/b> In a small bowl, whisk egg whites for one minutes. Add grated apple to the egg whites and gently stir. Pour into dry mix bowl, along with almond milk. Stir until just moistened.<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/div>\n<div><span><span><span><span><span><i><span><b>FOUR:<\/b> In a non-stick pan, drop pancakes, 2-3 TB at a time. When pancakes are 75% cooked (before flipping), sprinkle 1 TB of the toasted coconut\/oats mix on top of each pancake. Press down a bit with a spatula. Then flip and cook for 1-2 minutes, or when coconut\/oat mix has stuck to the top of the pancake. You have now made an OLACAKE!<\/span><\/i><\/span><\/span><\/span><\/span><\/span><\/div>\n<div><\/div>\n<div><span><span><span><span><span><i><span>Serve warm, cold, topped with syrup, caramel, agave syrup, peanut butter, or eat plain (which is still so tasty!).
