{"id":248,"date":"2012-01-09T16:42:00","date_gmt":"2012-01-09T16:42:00","guid":{"rendered":"http:\/\/memoirmunchies.com\/?p=248"},"modified":"2012-01-09T16:42:00","modified_gmt":"2012-01-09T16:42:00","slug":"pineapple-pops","status":"publish","type":"post","link":"https:\/\/memoirmunchies.com\/?p=248","title":{"rendered":"Pineapple Pops"},"content":{"rendered":"<div dir=\"ltr\" trbidi=\"on\">Happy Monday!<\/p>\n<p>As promised, I&#8217;m bringing you two healthy recipes&#8230;both vegan, both delicious, both with pineapple.<\/p>\n<p>I&#8217;m barely getting back into yoga\/pilates, and this is a nice salad to devour after a workout (or after just sitting around)&#8230;<\/p>\n<div><a href=\"http:\/\/2.bp.blogspot.com\/-5U7xvDdLnGY\/TwsWXdd1IOI\/AAAAAAAAA94\/UrCGM0ZRbCc\/s1600\/photo-698.jpg\" imageanchor=\"1\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"240\" src=\"http:\/\/2.bp.blogspot.com\/-5U7xvDdLnGY\/TwsWXdd1IOI\/AAAAAAAAA94\/UrCGM0ZRbCc\/s320\/photo-698.jpg\" width=\"320\"><\/a><\/div>\n<p><span><b>Yoga Happy Salad <\/b><\/span><br \/><span><b><span>3 cups salad greens (the greener=the better) <\/span><\/b><\/span><br \/><span><b><span>2 pineapple rings, sliced (1\/4 cup)<\/span><\/b><\/span><br \/><span><b><span>1\/2 crisp apple, sliced into small bites <\/span><\/b><\/span><br \/><span><b><span>1\/2 medium cucumber, sliced\u00a0<\/span><\/b><\/span><br \/><span><b><span>2 TB shredded carrots (or whatever you have on hand)<\/span><\/b><\/span><br \/><span><b><span>2 TB unsalted peanuts<\/span><\/b><\/span><br \/><span><b><span>1 TB balsamic vinaigrette<\/span><\/b><\/span><br \/><span><b><span><br \/><\/span><\/b><\/span><br \/><span><b><span>Toss salad and devour. As you can see, I ate on the floor, next to my new yoga mat. No formalities here.<\/span><\/b><\/span><br \/><span><b><span><br \/><\/span><\/b><\/span><br \/><span><b><span><br \/><\/span><\/b><\/span><\/p>\n<div><\/div>\n<p><span><b><span>On New Year&#8217;s, as the lit NYC ball dropped and Matt was lying on the couch in the midst of the flu, I tried to remember where I was last New Year&#8217;s.\u00a0 Oh my gosh, how could I forget? We were watching the fireworks show on Waikiki Beach. Mm, nice memory. So, in honor of pineapple paradise, here&#8217;s another oat-based bowl to add to your New Year&#8217;s breakfast list. (You do have a list of new recipes to try, don&#8217;t you? Me neither.)<\/span><\/b><\/span><br \/><span><b><span><br \/><\/span><\/b><\/span><br \/><span><b><span><span>Pineapple Pumpkin Oats<\/span><\/span><\/b><\/span><br \/><span><b><span><span><span>1\/2 cup oats<\/span><\/span><\/span><\/b><\/span><br \/><span><b><span><span><span>3\/4 cup water<\/span><\/span><\/span><\/b><\/span><br \/><span><b><span><span><span>1\/3 cup pumpkin<\/span><\/span><\/span><\/b><\/span><br \/><span><b><span><span><span>Dash of cinnamon and nutmeg<\/span><\/span><\/span><\/b><\/span><br \/><span><b><span><span><span>1 t. brown sugar (optional)<\/span><\/span><\/span><\/b><\/span><br \/><span><b><span><span><span>1\/4 cup sliced pineapple (canned or fresh)<\/span><\/span><\/span><\/b><\/span><br \/><span><b><span><span><span>1-2 TB chopped pecans\u00a0<\/span><\/span><\/span><\/b><\/span><\/p>\n<p><span><b><span><span><span>In a saucepan or in a microwaveable bowl, combine oats, water, pumpkin and spices\/sugar. Stir and heat until oats are cooked.<\/span><\/span><\/span><\/b><\/span><\/p>\n<p><span><b><span><span><span>Add in pineapple and pecans and let heat one additional moment, until fruit is warm and soft. Stir. Eat! <\/span><\/span><\/span><\/b><\/span><br \/><span><b><span><span><span>\u00a0<\/span> <\/span><\/span><\/b><\/span><br \/>I do hope your week is merry and bright.
