The idea of a pasta substitute inside a gourd? Alright!<\/p>\n<p>Since I had no idea what I was doing, I went to Martha for help. It&#8217;s a good thing.<\/p>\n<table align=\"center\" cellpadding=\"0\" cellspacing=\"0\">\n<tbody>\n<tr>\n<td><a href=\"http:\/\/3.bp.blogspot.com\/-wG4An08RV2c\/T1_vbqy1-OI\/AAAAAAAAC4A\/J__Ishzr_ak\/s1600\/photo%25288%2529.JPG\" imageanchor=\"1\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"240\" src=\"http:\/\/3.bp.blogspot.com\/-wG4An08RV2c\/T1_vbqy1-OI\/AAAAAAAAC4A\/J__Ishzr_ak\/s320\/photo%25288%2529.JPG\" width=\"320\"><\/a><\/td>\n<\/tr>\n<tr>\n<td>Out of the oven, turned over<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><\/p>\n<table align=\"center\" cellpadding=\"0\" cellspacing=\"0\">\n<tbody>\n<tr>\n<td><a href=\"http:\/\/1.bp.blogspot.com\/-nPx3CAKJlXM\/T1_v_uy6cpI\/AAAAAAAAC4I\/djOXXL84AUc\/s1600\/photo%252820%2529.JPG\" imageanchor=\"1\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"240\" src=\"http:\/\/1.bp.blogspot.com\/-nPx3CAKJlXM\/T1_v_uy6cpI\/AAAAAAAAC4I\/djOXXL84AUc\/s320\/photo%252820%2529.JPG\" width=\"320\"><\/a><\/td>\n<\/tr>\n<tr>\n<td>After scraping it with a fork&#8230;turns to spaghetti&#8230;magic!<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><\/p>\n<div><span>Roasted Spaghetti Squash<\/span><\/div>\n<div>Barely adapted from <a href=\"http:\/\/www.marthastewart.com\/338110\/roasted-spaghetti-squash-with-herbs\">Martha<\/a><\/div>\n<div>4 servings<\/div>\n<div><\/div>\n<div>1 spaghetti squash (3 or so pounds), halved lengthwise, seeds removed<\/div>\n<div>1 tablespoon extra-virgin olive oil, plus more for brushing<br \/>1 1\/2 tablespoons packed light-brown sugar<br \/>Coarse salt and freshly ground pepper<br \/>1\/2 cup grated Parmesan cheese (about 2 1\/2 ounces)<br \/>1 TB dried parsley<br \/>1 TB dried cilantro<br \/>1\/4 cup toasted almonds<\/div>\n<div>\n<div>\n<ol>\n<li>                                            Preheat oven to 400 degrees. Brush cut sides of squash with oil,  and sprinkle with sugar and salt and pepper to taste. Place squash, cut  sides down, on a rimmed baking sheet. Roast until tender, 45-50  minutes. Let cool slightly on the sheet for 10 minutes.<\/li>\n<li>                                            Scrape squash with a fork to remove flesh in long strands. (This is so fun!) Place  in a large bowl. Add oil, Parmesan, parsley, cilantro, hazelnuts, 1  teaspoon salt, and pepper to taste. Toss, and serve immediately.<\/li>\n<\/ol>\n<p>Notes: This is NOT filling on its own. It might work topped with marinara sauce, but some shrimp or chicken or something is def needed on the side! Just thought I should share. I made the mistake of taking a to-go bowl of the squash to work for lunch&#8230;and was hungry an hour later!
