Sometimes I don&#8217;t know what to do with the frozen veggies in my freezer. We get in a veggie rut at times and stock up on broccoli, okra, and stirfry mix&#8230;and all that broccoli (while I love it) get bor-ing. So let&#8217;s whip up a soup and mix up our veggie tonight!<\/p>\n<div><a href=\"http:\/\/4.bp.blogspot.com\/-F_zLH5WC7Ng\/T5L4AqsWCBI\/AAAAAAAADIs\/KjrAOwjBP8A\/s1600\/photo+%252890%2529.JPG\" imageanchor=\"1\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"240\" src=\"http:\/\/4.bp.blogspot.com\/-F_zLH5WC7Ng\/T5L4AqsWCBI\/AAAAAAAADIs\/KjrAOwjBP8A\/s320\/photo+%252890%2529.JPG\" width=\"320\"><\/a><\/div>\n<p><span><b>Creamy Low-fat Broccoli Soup<\/b><\/span><br \/><b><span>Adapted from <a href=\"http:\/\/www.marthastewart.com\/314341\/broccoli-cream-soup\" target=\"_blank\">Everyday Food<\/a>, April 2012<\/span><\/b><br \/><span>1 1\/2 pounds of broccoli (frozen or fresh), cut in bite-sized pieces<\/span><br \/><span>4 TB butter or margarine<\/span><br \/><span>1 medium yellow onion, diced small<\/span><br \/><span>2 cloves of garlic, sliced thin<\/span><br \/><span>1\/4 cup flour<\/span><br \/><span>4 cups low- or no-sodium chicken broth<\/span><br \/><span>1 cup water<\/span><br \/><span>Dash of crushed red pepper (optional, for a kick)<\/span><br \/><span>1\/4 milk or cream (optional!)<\/span><br \/><span>Salt and pepper, to taste<\/span><br \/><span><br \/><\/span><br \/><span>Gadgets needed: medium pot, knife, wooden spoon, blender<\/span><br \/><span><br \/><\/span><\/p>\n<div><a href=\"http:\/\/4.bp.blogspot.com\/-Vzt4v9Da40Q\/T5L4c0-iK8I\/AAAAAAAADJU\/Eq6XXzCpMhk\/s1600\/photo+%252896%2529.JPG\" imageanchor=\"1\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"150\" src=\"http:\/\/4.bp.blogspot.com\/-Vzt4v9Da40Q\/T5L4c0-iK8I\/AAAAAAAADJU\/Eq6XXzCpMhk\/s200\/photo+%252896%2529.JPG\" width=\"200\"><\/a><\/div>\n<p><b><span><span>1base<\/span><span>\u00a0<\/span>In a medium pot, melt butter. Add onion and cook, stirring occasionally, for 7 minutes. Onion should soften. Then add flour and stir for 1 minute. While whisking, simultaneously add 3 cups broth and 1 cup water and bring to a boil over high. (Stop whisking.) Reduce the heat and simmer for 10 minutes, only whisking occasionally.<\/span><\/b><br \/><b><span><br \/><\/span><\/b><br \/><b><span><br \/><\/span><\/b><\/p>\n<div><a href=\"http:\/\/1.bp.blogspot.com\/-Zx6pZEBTLgI\/T5L4Na6nzLI\/AAAAAAAADJE\/Dz_7F9Hfztk\/s1600\/photo+%252894%2529.JPG\" imageanchor=\"1\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"150\" src=\"http:\/\/1.bp.blogspot.com\/-Zx6pZEBTLgI\/T5L4Na6nzLI\/AAAAAAAADJE\/Dz_7F9Hfztk\/s200\/photo+%252894%2529.JPG\" width=\"200\"><\/a><\/div>\n<p><b><span><span>2green<\/span> (If the broccoli is frozen, use a 2nd pot &#038; 1\/4 cup water to cook broccoli until hot but not tender. Transfer to the butter mixture after cooked. If it&#8217;s fresh broccoli, carry on.) Add the broccoli and bring to a simmer. Cook until the broccoli is very tender, 20 minutes. Blend until smooth; take care not to burn yourself!! If you&#8217;d like the soup thicker, add 1\/4 cup milk or cream. If you&#8217;d rather it be thinner, add that extra cup of broth.<\/span><\/b><br \/><b><span><br \/><\/span><\/b><br \/><b><span>Serve with crusty bread, garnished with a sprinkle of smoked paprika, sesame seeds, or shredded cheese. Yum<\/span><\/b><\/p>\n<p>There ya have it, a healthy and creative way to eat those veggies. Have a wonderful Saturday!
